Are you making anything sweet for your “sweetie” this Valentine’s Day? Here’s a treat that is sure to please. (That sounded like a commercial!)

Cracker Toffee! I know, it sounds weird, but it’s OHHH sooo good!!!

My husband, who is not a huge candy person, devoured them! (I need to figure out how to make these sugar-free and FAT free…) After the big pieces were gone, the kids where still begging for the left over crumbs.

I adapted this recipe from Make Life Delicious. She used saltines, but I used buttery crackers (Town House), and they turned out de-lish!!!

Cracker Toffee

40 crackers (saltines or buttery crackers, like Town House)
1 cup butter
1 cup dark brown sugar
2 cups semisweet chocolate chips
3/4 cup chopped pecans/walnuts, if desired

Preheat oven to 400 degrees. Line cookie sheet with foil and spray with non-stick cooking spray. Line cookie sheet with crackers in single layer.

In a saucepan combine the sugar and the butter. Bring to a boil and boil for 3 minutes. Immediately pour over saltines and spread t cover crackers completely.

Bake at 400 degrees for 4-5 minutes, or until toffee is bubbly. Remove from oven and sprinkle chocolate chips over the top. Let sit for 5 minutes. Spread melted chocolate and top with chopped nuts, if desired. Cool completely and break into pieces.

These taste like crackers on steroids, or crack, or somethin’. In fact you can’t even tell there are crackers in it! All you can taste is the buttery, crunchy toffee.

I’m pretty sure that these toffee bits are going to meet their fate on top of some ice cream… Fo’ Sho…
