So we were on vacay last week, and we had a lot of fun! (If you don’t count for the fact that Doug, myself, 4 kids, and my sister and brother-in-law were squeezed into a one bedroom condo all week! :)) (My mother may decide to disinherit me when my sister tells her they decided not to have kids after last week.) 😉
Anyhoo, we did have fun. We got to see lots of God’s beautiful creation up in the Great Smoky Mountains.
We were even privileged to see this guy.
He was sleeping in a tree about 10 feet from the road as we drove by. Pretty cool to see for us Ohioans!
While we were in the Smokies, we visited the Pancake Pantry in Gatlinburg, and it was delish!!!
My kids got the M&M pancakes with the peanut butter syrup, and I may have put a little of their syrup on my pancakes. 😉 It was soooo scrummy. (Yes, that’s a real word!) When we got home my kids begged me to make it. Sooooo, here is what I came up with…
Peanut Butter Syrup
½ cup peanut butter
½ cup plus 2 Tbsp light corn syrup
Stir the peanut butter and corn syrup together in a small bowl. Just before serving, microwave for about 10 to 15 seconds, until warm, this will make the syrup less thick and more runny. Do not boil as this will cause the syrup to harden as it cools. Drizzle over your favorite pancakes. (Mine are chocolate chip... For sure!!)
This syrup is fabulous! It tastes just like the syrup from the Pancake Pantry! Yummo!

I’m pretty sure I will be using this syrup on ice cream, and whatever else I can think to use it on… Bananas. Apples. Brownies. Cake. Broccoli. Okay, not broccoli… maybe… 😉
